Vegan Cheese Lab · Builder · Sommelier

Substrate, culture, mould, ripening — as one connected system. Pick a cheese class, assemble the recipe, and the lab computes nutrition, builds the process chain with pH/temperature/time targets and generates a recipe card.

Classification

The seven cheese classes

Vegan cheese cannot be ordered 1:1 by dairy cheese — the casein network is missing. A more useful ordering is by structure principle and ripening route. Each class has its own pH targets, water contents and mould logic.

Structure, not imitation. Plant analogues form no continuous protein network like dairy casein; firmness and melt arise via fat (coconut oil), gelling agents (agar, carrageenan), starch (tapioca, zein) or fermentation gels. That is why "meltability" is its own technical axis, not a degree of ripeness.

Substrates & nutrition

Basis per 100 g dry substrate (USDA / manufacturer averages). "Role" shows the main functional job in the cheese: structure, fat, culture carrier or flavour core.

Allergenicity decreases with fermentation. A controlled study (Chen et al. 2020, Nutrients, doi:10.3390/nu12030648) shows: in rejuvelac-fermented cashew "cheese", cashew allergenicity decreased significantly while Lactococcus, Pediococcus and Weissella dominated. Fermented nut cheese is tendentially better tolerated by sensitive people than raw.

Microbiology

Cultures & noble moulds

Two tools with different jobs: souring cultures (lactic acid bacteria) lower the pH and build tang/umami; ripening moulds (Penicillium, Geotrichum) form rind and break down proteins over weeks — yielding a depth no flavour powder delivers.

Culinary noble mould ≠ spoilage. Penicillium candidum (white mould) and P. roqueforti (blue mould) are culinary pure cultures and safe. If a ripening cheese smells of rotten egg or shows pink/black fuzz, it is foreign contamination — discard. Work clean: sterile jars, salt at the surface, controlled humidity.

Structure engineering

Texturizers & process logic

Without casein the structure must come from elsewhere. Three routes: fat crystallization (coconut oil, firm on cooling), hydrocolloid gel (agar firm, carrageenan meltable) and starch gelatinization (tapioca/zein for mozzarella stretch).

Context

Foundations & honest evidence

What holds, what is ideology. The field splits into a measuring register (rheology, microbiology, nutrition) and a vitalist one (enzyme/light thesis). Here the clean separation.

What holds empirically

substantiated
  • Fermentation builds flavour. Lactic acid bacteria lower pH, create tang; ripening moulds break proteins into peptides/amino acids — measurable umami build-up.
  • Allergenicity decreases for cashew through fermentation (Chen et al. 2020).
  • Structure is solvable via fat/gel/starch — zein achieves cheddar-like melt (Mattice & Marangoni 2020).
  • Ripening moulds beat flavour powder in sensory depth — consensus of practitioners and studies.

What is unsubstantiated / overstretched

critical
  • "42 °C enzyme thesis". The idea that heating above 42 °C destroys "vital substances and light information" is vitalist, not nutritionally supported. The body's own digestive enzymes replace food enzymes.
  • Casomorphin "addiction". The thesis that cheese is opioid-addictive is scientifically untenable: the direct animal study (Reid & Hubbell 1994) was negative, EFSA (2009) found no causation; the prominent source is a veganism advocacy group (PCRM). Sensory appeal ≠ chemical dependence.
  • "Naturally healthy" blanket. Nut cheese is nutrient-dense but calorie- and fat-rich; no free pass.
Structure thesis (ρ/δ linkage). Whoever controls the conditions of legitimation — what "real cheese" is, what "mere alternative", what "naturally healthy" — determines what counts as a secured statement. The vegan-cheese debate is a consecration conflict: the same asymmetry between matter (rheology, microbiology) and interpretation (real/fake, pure/living). The tool separates the two deliberately: data on the left, claim marked.
Precision fermentation (technical resolution). A third line makes real milk protein without an animal: casein by precision fermentation (New Culture — mozzarella; Formo — casein in EU Novel-Food / US GRAS review) resolves the structure problem at the root, because the casein network becomes available again. Whey (Perfect Day), by contrast, builds no cheese structure. This shifts the interpretive question: with an identical molecule — what does "real" hang on?
